Banana Fruit Slice - no added fat or sugar

With all the media coverage on the perils of saturated fat and refined sugar - we were looking for a recipe for a healthier cake style slice.

This recipe we've created is a little unusual - it's not as sweet as typical cakes and slices. But when you remember it has no refined sugar, artificial sweeteners or added fat then you can enjoy it guilt-free and your taste buds adjust.

  INGREDIENTS
  • 3 medium very ripe bananas
  • 1/2 cup of your favourite dried fruits (dates, sultanas, raisins, apricots) dice larger fruit.
  • 1 egg
  • 1 cup self-raising flour
  • 1 teaspoon ground cinnamon
  • 1 cup rolled or whole oats
  • 1/2 teaspoon vanilla extract/essence.

Mash the bananas and whip them till they are smooth and creamy. Add the egg and vanilla and mix again.  Add all the remaining ingredients and blend.
Turn into a slice pan lightly sprayed with oil (mild bending of the no added fat rule).
Cook at 350° F/180° C for 15-20 minutes or until lightly golden and firm to touch.
Enjoy.

Variations:
  • Add 1/4 cup of sunflower seeds for a little crunch.
  • Dust with additional ground cinnamon.
  • Use wholemeal flour.
  • ​​Add coconut and Craisins/dried cranberries
